Hummus is not the only dish Israeli’s argue about and while shawarma may not have the international renown of falafel, the street snack is fundamental to Israel’s culinary landscape. The meat preparation indigenous to the Levant places layers of seasoned lamb, beef, veal, chicken or turkey on a spit with deposits of fat placed throughout for flavor. Grilled for hours, the meat is then shaved off and served stuffed or wrapped into a pita is customarily eaten with the traditional accompaniments of salad, hummus, tehina and scoug.
