Modern Israeli cuisine not only makes use of the nations culture influences but also its agricultural advances. The diverse geography of the nation allows for Israel to harvest some of the best produce in the world. Looking back to the land, farm-to-table cuisine and the slow food movement is quickly becoming a hallmark of the modern Israeli food culture. Eucalyptus may be nestled in the heart of urban Jerusalem but the food served here comes straight from the land. Dishes harkening back to ancient times feature locally sourced products and herbs from the surrounding hills to create flavors that separate Eucalyptus from the rest. 14 Hativat Yerushalayim, Jerusalem; 972 (2) 624 4331; Sun- Thurs 12:30- 11 PM, Sat 7-11 PM; $$$ CC accepted
