Perilla's main culinary focus is to use ingredients that are fresh and in season. This decreases its carbon footprint by cooking with foods that don't require being shipped from other countries and states. Perilla also strives to stay a neighborhood restaurant that is small and intimate. Opened by Harold Dieterle, a previous winner of Top Chef.
