Hasabichiya

Sabich is one of the few Israeli dishes travelers would be hard pressed to find anywhere else and is said to be the only one invented and exclusive to the nation. Eggplant slices are fried up and served with slices of hardboiled egg, pickles, cabbage and Israeli salad (cucumbers and tomatoes) stuffed into a pita spread with hummus and topped off with tehina, amba (a spicy sweet mango sauce) and scoug. Iraqi Jewish immigrants invented the dish when they immigrated to Israel in the 1940’s and 1950’s. The immigrants, who couldn’t cook on the Sabbath, typically ate the above ingredients cold, eventually deciding to roll them into a single pita. Constructed out of inexpensive and satisfying ingredients, sabich reflects the economic position of the immigrants who laid the groundwork for Israel today.
