真如镇羊肉馆
概览
真如羊肉是闻名江浙沪的传统风味小吃,始于18世纪,已有200多年历史。旧时,每天凌晨三时半,农民上街泡茶馆,四时半许,进羊肉馆要上一碟羊肉,酌一二两白干,此后一碗羊肉汤面,即下田头。真如羊肉品种有白切、红烧两种。白切羊肉,又称“阿桂羊肉”。以王阿桂的独特制作方法得名。有色、香、鲜、酥的特点。红烧羊肉,又称“生糟羊肉”。有卤浓、肥甜、鲜糯的特点,且肥而不腻,酥而不碎,食时须热锅热吃。至今有许多顾客从本市各地慕名来真如享用羊肉。1986年4月20日,时任中共中央政治局委员、国务院副总理的吴学谦来真如视察,谈起少年时随祖父来镇食羊肉的趣事,记忆犹新,临行还特地购买了1.5公斤白切羊肉带回北京,让家人共尝。2007年,真如羊肉的制作工艺被列为首批“上海市非物质文化保护遗产”
