Falafel is the Israeli food icon, a national dish that has come to be the symbol of Israeli cuisine worldwide. It's hard to throw a stone without hitting a falafel stand in Israel but few have reached the level of acclaim that Levy Brothers has. Located on a busy corner in the famed Machane Yehuda Shuk, the deep fried chickpea snack fly across the counter. A staple of the market for as long as anyone can remember, the three elder Levy brothers serve up the perfected golden balls with exquisitely prepared customary accompaniments including eggplant, salad, tahini and scoug. 55 Machane Yehuda, at the corner of Agripas Street; Sun- Thurs 8 AM- 7 PM, Fri 8 AM- early afternoon; $ cash only
