Rezumat
This cafe is the go-to place on the West portion of Cornell’s campus for those looking for locally-sourced vegetarian and vegan lunches. Their tofu, soy, and seitan (meat substitute) are sourced locally. They purchase their seitan (meat substitute) from Susie’s Seitan, located on the west side of Cayuga Lake. Some other local ingredients include apple juice from Red Jacket Orchards in Geneva, NY, cheddar cheese and other ingredients from Maines Paper & Food Service, Inc. in Syracuse, NY.
