Salvatore Bklyn is a small cheese making operation run out of the kitchen of Lunetta in Boerum Hill, Brooklyn. They are well known for their ricotta; some say you can't get ricotta like this outside of Tuscany. They make their cheese with cow's milk from Hudson Valley Fresh, a farmers cooperative in upstate New York.

You can find Salvatore Bklyn products at the the Brooklyn Flea (Fort Greene on Saturday, Williamsburg on Sundays) or at many retail locations:
