The Druze are an Arabic tribe, fully friendly with the Israeli State. The Druze eat a mostly vegetarian diet, their specialties including a large flat unleavened bread and labeneh, a traditional strained yogurt made form cow or goat milk. Lemon, olive oil, fresh vegetables, bulgur and the local spice mix za'atar are hallmarks of Druze food. The Druze villages at Isfiya and Daliat-el-Carmel are lined with food stalls and small eating establishments showcasing the local Druze culinary tradition. All are good and authentically Druze so picking a place (or two) is up to whichever catches the eye. While there be sure to sample the Druze version of a crepe- their ultra thin pita is spread with labeneh, sprinkled with za'atar and drizzled with olive oil. Daliat-el-Carmel and Isfiya; daily, weekends are best, especially Sat; $ cash only, CC only accepted at some vendors
